How do I change webmail used on my 123 Reg server running Plesk?

Log in to your Parallels Plesk Panel.

Click on the Domains link on the left panel.

Click on the Domain name link for the relevant domain name.

Select the webmail that you would like to use from the drop down menu and click on the OK button.
